Molasses Spice Cookies- perfect for Christmas!

This afternoon I was feeling quite festive and since Maddie was down for a nap, I figured I’d get my Christmas cookies baked.  I’m a huge fan of spiced cookies; allspice, cloves, ginger- I love the way they taste in cookies.  What’s great about these Molasses cookies is their wonderfully gooey-chewy texture.  They’re dense and substantial.  The way they crackle when baking gives the cookies a festive look as well.  Sure, they’re a little extra work- rolling them into balls & dipping them into sugar, but it is so worth it.



  • 4 cups all purpose flour
  • 1/2 teaspoon of salt
  • 2 1/4 teaspoons of baking soda
  • 1 1/4 cups white sugar + 1/4 cup divided
  • 3/4 cup dark brown sugar
  • 2 teaspoons ground ginger
  • 1 1/4 teaspoons ground cloves
  • 1 1/4 teaspoons cinnamon
  • 2 sticks unsalted butter, softened at room temperature
  • 1/2 cup unsulfured molasses
  • 2 large eggs at room temperature


Pre-Heat oven to 325 degrees and line baking sheets with parchment paper.

In a large bowl whisk together flour, salt, baking soda, ginger, cloves, and cinnamon.

In stand mixer (or large bowl with electric mixer), beat together butter and sugars until light & fluffy, then beat in molasses.  Beat in eggs 1 at a time, beating well after each addition.  Gradually beat in flour mixture and combine well.


In a small shallow bowl, place 1/4 cup of white sugar.  Form dough into 1- 1 1/2 inch balls and roll in sugar.  On baking sheets arrange bowls about 4 inches apart and flatten slightly with the bottom of a glass.

Bake cookies in batches in the middle oven- they will only get crackly if exposed to heat source.  13 minutes or until puffed and golden (cookies should be soft).

Transfer to a wire rack to cool.

Today I am grateful for:

  1. maddie taking a long enough nap to make 4 dozen each of four different types of cookies
  2. my cousin chris cooking a delicious dinner and letting me, John, & Maddie crash it!
  3. my stand mixer!  How else could I bake so many cookies during one toddler nap?
  4. living close to family- it’s just so nice to be able to WALK to their house and say “hi”.
  5. my husband, the best bowl licker!
