chili chicken tacos in the slow cooker… yum

Tonight we had chili chicken tacos.  Inspired by the recipe on page 96 of everyday food, I figured I’d dust off the ‘ole slow cooker.  John and I are totally into anything TexMex.  It’s actually a running joke with my mom, she’ll call up and say, “whaddaya eatin’ for dinner, TexMex?”  Needless to say, when I saw the recipe I knew it was gonna be perfect for us.

I forget how absolutely great it is to come home and have a meal waiting (or at least the major aspect of the meal).  It worked out perfectly, since John & I have RCIA class on Monday (Catholic school for grownups) it’s perfect to have something ready to go at 5.30pm.

Here’s the recipe.  

2 pounds boneless, skinless chicken thighs (about 6)

4 garlic cloves, sliced thin (perfect amount)

1/2 cup prepared tomato salsa (we used Ortega medium strength, it was on sale)

1-2 tablespoons chopped canned chipotle chilies in adobo (I used probably 3 tablespoons as we like it spicy)

1 tablespoon of chili powder (I used 1 tablespoon chili powder and 1/2 teaspoon of chipotle chili powder for extra heat)

coarse salt & ground pepper

8 hard corn taco shells (we used ortega as they were on sale)

cilantro, shredded cheese, lime wedges, and sour cream (for serving).  We also had shredded lettuce and sliced red onion.

Directions:

In slow cooker, combine chicken, garlic, salsa, chilies, chili powder, 1 teaspoon of salt, and 1/4 teaspoon of cracked pepper. Cover, cook on high for 4 hours or on low for 8 hours.

Transfer chicken to a serving bowl and shred using two forks.  Moisten with cooking juices (we actually used the cooking juices as the “sauce”- it was way better than just plain salsa.  Smokey, garlicky, spicy… delicious.

  1. Oh crap. That sounds awesome. Will have to make it. I busted out the crockpot the other week to make maple orange glazed chicken with acorn squash and sweet potatoes. That rocked, as well.
